After a busy 12 hour day shift on Friday I arrived home, having successfully avoided the numerous temptations of take away on my drive to my house. I wanted something quick, easy and healthy using the ingredients I had in the fridge…and from this my Chilli Turkey Veggie stir fry was born! Great for a quick, nourishing meal and also excellent to make a big batch of and freeze for future lunches/dinners!
(Makes approx. 3-4 serves)
- 1-2 tablespoon coconut oil
- 500g turkey mince
- 2 cloves garlic (crushed)
- 1 capsicum
- 1 zucchini
- 2 handfuls chopped kale
- 2 handfuls baby spinach
- Himalayan pink salt
- Cracked pepper
- 1-2 teaspoons cumin
- 1-2 teaspoons chilli powder
- 1 cup bone broth or stock (I use Broth of Life powdered lamb bone broth added into a cup of hot water)
Spoon 1-2 tablespoons of coconut oil in a fry pan on medium heat. Add the turkey mince and 2 cloves crushed garlic. Seasoned with chilli powder, cumin (add more depending on how spicy you like your food.) Stir regularly, breaking up the mince and allowing to cook until slightly browned.
Chop capsicum, broccolini, zucchini and add in to mince. Add in bone broth or stock. Cook on medium heat for approx. 15 mins, or until turkey mince and veggies cooked through.
Serve or seperate into container to refrigerate or freeze for later.
The beauty of this recipe is that you can easily swap out any veggies you don’t like or don’t have on hand for whatever you have in the fridge! Adjust your seasonings to the level of spiciness you prefer.
